Winemaking: Hand harvested. 100% whole bunches. Alcoholic fermentation took place in closed stainless steel tank, with its own indigenous yeasts. After 15 days, pressed with a manual press and racked back to stainless steel. No correction or adding was done. One last racking is carried out to remove impurities and solid residues by decantation. Bottled without filtering or stabilization, so there will be deposits in the bottle.
