Winemaking - The grapes were 100% whole bunch pressed with minimal settling to encourage natural fermentation. It was 100% fermented in small cement egg for a long and consistent fermentation of 3 months and 100% went through malolactic fermentation. The wine was left for 10 months on full lees in the egg where the lees stayed naturally in suspension.
Sweet spice, honey and lovely toasty notes despite there not being any oak are layered harmoniously with more upfront lemon curd and ripe fig. Very textural on the palate with a voluptuous long and silky finish.
