Winemaking - Alcoholic fermentation in steel tanks on the skins for 10-15 days with indigenous yeasts at controlled temperature and spontaneous second fermentation according to the long Charmat Method for 4-5 weeks.
What it tastes like - Intense ruby red colour with purple tinges and a lively mousse. Distinctly vinous, with an intense and spicy aroma; medium bodied, well-structured with a fruity (cherry and sour black cherry) aroma and a persistent finish with a slightly astringent note balanced by 10g of residual sugar.
