Vinification and ageing : Direct pressing, vinification and aging in oak barrels for 12 months. This wine has known for only input a little sulfur. It is unfiltered.

"Dry and complex wine, with notes of white fruit (peach, pear, quince), citrus zest and acacia flowers. The palate is racy with a tonic acidity and chewiness. The finish is marked by beautiful bitters, peppery, with a minty touch which gives the whole a pleasant airy sensation."
