Winemaking - Organic farmed, then hand harvested. This is followed by co-maceration, direct press of Grenache Noir and Cinsault, spontaneous fermentation in stainless steel with indigenous yeasts.
What it tastes like - Levat is a chunky and robust pink wine, that plays on the tradition of wine under the Tavel appellation which can only ever be rosé. Deep, with a brambly backbone - the old vines here create structure, beautiful notes of freshly harvested lavender and thorny roses.
