Winemaking - The harvest is carried out manually. Once the grapes arrive at the winery, they are gently pressed, and after a natural static settling process, the must ferments in stainless steel deposits with native yeasts. When the fermentation ends, the wine is left to stand for 3 months in stainless steel deposits with its fine lees. It is bottled without clarifying nor filtering and with no added sulphites.
What it tastes like - This is Esmeralda’s village wine and flagship of the winery. SantYuste is made of direct press Verdejo from 130+ year old vines (pre-phylloxera!) planted on a mix of sand, slate and clay. The wine displays strong mineral character with subtle citrus notes. Fresh and sapid on the finish.
