Grapes – Rebula aka Ribolla Gialla
Region – Brda, Slovenia
Winemaking - spontaneous fermentation in steel tank, short of maceration on skin, aging 6 months in steel tanks. No yeast or sulfites added, unfiltered, fermented by natural methods.
What it tastes like - Waxy and textured, with floral aromas and ripe yellow peach and nectarine notes on the palate. Unfiltered, unfined and lightly fizzy.
