Winemaking - 100% Carbonic Maceration (grapes are fermented as whole bunches in a CO2 rich environment before being crushed). Two weeks later the grapes are pressed. unfined, unfiltered and low sulphur.

What it tastes like - Lots of dark cherries and plums with a herbal character. The variety is closely linked to Gamay and this really shines through in this wine. Bursting with fresh flavour!
