Grapes - 50% Chardonnay, 46% Pinot Noir, 4% Pinot Meunier.

Winemaking - Hand harvested when the sugar acid balance was optimal for sparkling wine, the grapes were very gently pressed with no SO2 added to allow a gentle oxidation. Each varietal was fermented separately. The juice was transferred to stainless steel tank for fermentation followed by mlf. The blend was then made before second fermentation in bottle. The wine was aged on its lees for 18 months before disgorgement and re-corking with a relatively low dosage of 6.8 g/l.
Taste - Pale straw coloured with a creamy leesy nose backed by aromas of white peach and lemon. The palate is quite rich and fruity, with yeasty flavours mingling with red fruits and citrus followed by a toasty gentle finish.
