Winemaking - Each varietal is vinified separately and go through malolactic fermentation. Aged on its lees in oak barrels. Prior to secondary fermentation, a vintage base wine is blended with a solera of reserve wines. The amount of time sur lie varies and is cited on the wine's back label.
While usually released as a Brut Nature, the wine can also come as Extra Brut depending on the bottling.
What it tastes like - Champagne Métisse ages on the lees for over 2 years, has minimal sulfite addition and no final dosage (Brut Nature). A Champagne with delicate bubbles, it releases aromas of white-fleshed fruits and citrus fruits, as well as floral and spicy notes. It has a fresh and lively flavor on the palate.
