The chemical composition of peat varies wildly depending on a few factors – bog type, extraction depth and, above all, origin. The woodier, lignin-rich Highland peat cut for Ardmore burns sweet and mesquite-like, whereas the peat on Islay produces a phenol-thick medicinal smoke owing to its high level of sphagnum moss. With this unique refill cask, you get the best of both: two Scottish terroirs superimposed for an eclectic smoky dram with an enhanced sense of place.
