Grapes: Cabernet Sauvignon, Merlot, Malbec, Syrah/Shiraz
Region: Great Southern Australia
How it's made: Parcels of Cabernet and Merlot were destemmed and crushed into closed fermenters and inoculated immediately. Ferments were pumped over twice daily with most parcels being pressed off at the completion of ferment and a small fraction undergoing extended maceration. Maturation took place in predominantly French oak for 14 months. The blended wine was then lightly fined before bottling.
Tasting Note: This wine opens with attractive aromas of cassis, blackberries, tobacco leaf, coffee beans and hints of cedar. Great fruit clarity on the palate alongside fine tannins and a good natural acidity give this wine structure and complexity.
