Vin Jaune

There are aromas reminiscent of fino sherry, due to this wine’s aging ‘sous voile’, or ‘under veil’ – an oxidative form of aging, similar to aging under ‘flor’ in Jerez. On the palate there are notes of baked hay, green almonds and caramelised lemon peel leading to a deliciously nutty finish.
