Vinification

Adega Sernande is a project born of friendship between Ribeira Sacra natives María Aira Pumar and Antonio López Casas and
Gredos vigneron Orly Lumbreras. The trio met at a natural wine event in Galicia, where Orly was showing his wines. They kept in
touch, they became good friends, and in 2014, they succeeded in launching an incredible project together: Adega Sernande, named
for the village of Sernande, where the trio built out a small winery in an old stone house.

Producer Information

Pozo do Oso (The Bear’s Well) is a small, isolated parcel of just 300 plants, planted at 600 meters altitude on a southeast-facing slope
of slate and schist soils, overlooking the River Sil in Maria’s village of Vilachá. Mencía with Merenzao, Brancellao, Garnacha, and
Mouraton are harvested together, fermented with native yeasts in open vats with 30% whole bunches and daily foot treading, then
aged for 8 months in stainless steel tank.
(Adega Sernande operates outside of the D.O. Ribeira Sacra. For reference, the vineyards in question are located in the subzone
referred to by the D.O. as Quiroga-Bibei.)
