Ojo De Dios, Original Joven Mezcal
Ojo de Dios Mezcal is the result of the hard work of Maestro Mezcalero, Francisco Ortiz, and master blenders, Cynthia Villalobos and Citali Velazquez. The spirit is made from 100% 7-8 year old Espadin agave, sustainably estate grown in San Luis del Rio, Oaxaca. The agave piñas are harvested then cooked in a stone-pit oven fired with local oak wood. The cooked piñas are crushed with a traditional tahona, drawn by a donkey called Chicharito (Little Pea), and the resulting aguamiel and agave fibres are wild-fermented in wooden barrels. The musto is double-distilled in 250 L copper pot stills. The result a complex and well balanced mezcal of excellent quality - very versitile for cocktails or simply sipping.
