Winemaking: Organic and Biodynamic viticulture. No added sulpher. Varieties are vinified separately, the Garnacha with 30% stems and the Tintorera with 100% stems. They are fermented in open top containers and have a long post ferment maceration where Malolactic fermentation occurs. Aged in 400ltr barrels for 7 months and 12 months respectively then blended together and bottled with no fining or filtering.
