Noilly Prat Vermouth

Made up of Picpoul and Clairette, from the neighbouring Marseillan area of Southern France, the two varietal wines are matured outdoors in oak for a year before being combined and added to a secret recipe of 20 herbs for a 3-week maceration. After separating the spent herbs, the concoction is rested for a further 6 weeks to allow the flavours to marry, creating a final dry vermouth which is complex and layered.
