Winemaking - Raul Calle produces microcuvée with the typical natives of the Sierra de Gredos (Madrid). All adjuvants and additives are banned, including the use of sulphites. Pepinaco is a Garnacha from old vines recovered from abandonment, on a granite soil where the rocky part is already a few centimeters away. The vinification takes place by semi-carbonic maceration, in whole bunches for fifteen days. Then the pressing takes place. A fresh and juicy red, despite the alcohol content, perfect even in summer for a lunch with friends.
What it tastes like - Notes of rose water, rosemary and a hint of petrolium. Spicy ketchup and sweet tomatoes mixed with ripe juicy plums. A note of roasted almonds on the back palate with a spice.
