
2021 Hunters Marlborough Sauvignon Blanc, New Zealand

Winemaking - Harvested in the cool of the morning and protectively handled using nitrogen to exclude oxygen. The fruit was chilled, de-stemmed, crushed and gently pressed. Handling was kept to a minimum to reduce oxygen uptake, helping preserve the vibrant fruit character. The juice was cold settled then run off to stainless steel tank for a slow and cool (14C) fermentation with selected yeast that lasted 28 days. The wine was stabilised over the next 8 weeks then bottled.
What it tastes like - Intense aromatics of guava, lime and passion fruit. The palate is powerful with ripe tropical notes backed by a grassy, citrus zing.
