Winemaking - Part fermented on skins with wild yeasts. The wine is bottled before the primary fermentation is finished. 

What it tastes like - Exotic nose with a herbal character on the edges, nice fleshiness on the palate coming from spending three weeks on part of the skins. Bone dry and lip smackingly delicious.
