Winemaking: 60 year old Malvar from Tajuña Valley (Madrid). Destemmed, then fermentation in open barrels and tanks, manually pressed after 15 days skin maceration, racking to old clay amphoras, where 5 months ageing took place under a veil of flor.
What it tastes like - Malavara named after the grape Malvar and the word for bad or ungracious, in reference to the variety, often looked down on as a “little, local” grape. It’s a vibrant and energetic skin contact white, so expect a funky orange wine.
