Winemaking - Callejuela Amontillada Origen is a generous one that is part of the DO Manzanilla Sanlúcar de Barrameda . Its harvest is delayed as much as possible so that the wine does not lose that uniqueness and strength during its traditional biological aging, in order to give it the importance that the soil and work in the vineyard deserve. After obtaining this must, it is aged under the soleras and criaderas system for an average time of 12 years. During that time, it has been aged under a flower veil and through oxidative aging, something that offers this Amontillado a certain complexity.
What it tastes like - Harvested late to retain structure & varietal personality throughout biological ageing - 7 years in solera of Blanquito Manzanilla Pasada, then 4 to 5 years further oxidative ageing. This has noticeable Manzanilla character from its time spent ageing under flor.
