Winemaking - Passitivo Primitivo is produced using only the best hand-picked Primitivo grapes from low-yielding vineyards in Puglia. A portion of these grapes follow a rare wine making technique called "appassimento", whereby the grapes are dried for a brief period to concentrate their aromas and rich fruit flavours. The resulting wine is intense ruby-red in colour with a complex bouquet reminiscent of cherries, raspberries and redcurrants. The partial oak-aging adds a pleasant roasted and a spicy aroma and makes this full-bodied and supple wine, perfect with roasted red meats and mature cheeses. This has always been one of our most popular red wines.
